Beetroot Harvest

I love this jewel of a root with its sweet earthy flavor not to forget the equally delicious tops.
I sowed Beetroot ‘Bolthardy’ AGM at the end of July in raised beds at my Allotment and harvested the majority after over the last 3 weeks we are now at the beginning of October with a few more roots left to pull.
I turned my humble harvest into a wholemeal pastry beetroot & goats cheese tart, a short crust pastry beetroot tops & goats cheese tart and two jars of sliced beetroot pickled in red wine vinegar.

I found beetroot an easy and satisfying crop to grow and can’t wait to try some different varieties. Such as Beetroot ‘Chioggia’ a Italian red and white ringed variety, the yellow B. ‘Burpee’s Golden’, B. ‘Cylindra’ and the white B.’Albina Vereduna’.
