Hey everyone boy do I have a GREAT pizza recipe for you but before we can talk pizza…
Lunch
Post-run Max and I hit up The Bagel Corner for some bagels.
The Bagel Corner is a locally owned bagel bakery located really close to South Main Street.
I had a Lox and Cream Cheese on All Seed and Max had the Happy Valley that was stuffed with veggies.
I had added tomato, red onion, and capers. I’m a traditionalist. I also had reduced fat cream cheese. Runner’s world recommends having meals like bagels and pizza after runs but suggests going skim, part-skim or low in fat with the cheese. Who knew it was healthy to have bagels and pizza!?
Totally delicious!
I rehydrated after my run with some Zico.
Then we spent the afternoon seeing Cowboys and Aliens! So good! Who doesn’t like cowboys, aliens, James Bond and Indiana Jones all at once, I mean seriously!
After the movie we got crackin’ on dinner.
Dinner
Ingredients
Add in some Betty Crocker pizza crust, beer, chicken and Sweet Baby Ray’s Honey BBQ Sauce and you’ve got it made.
While at the store looking for pizza ingredients I came across these mini personal watermelons. We picked the best one in the bin I’m sure.
Then we cracked open a new beer.
I really liked it because it had a fruity element. But it was mostly very wheaty and light lagery. All beer attributes I like.
Cap on.
Cap off!
Max and I enjoyed our beer and watermelon while making dinner. He was on crust detail and I was on the chopping mission and cooking the chicken. We pre cooked our chicken breasts in some bbq sauce.
I think I ate 5 half slices of watermelon… it was just too good, like candy.
We pushed out our dough, layered it with bbq sauce, then part-skim mozzarella cheese, button mushroom, red onion, red pepper, tomato, bbq chicken, basil, and cracked red pepper. Then we topped it with a combination of cheddar and mozzarella.
While the pizza cooked we dug into the salad.
in the mix…
romaine lettuce, red onion, red pepper, mushroom, tomato, some of the mozzarella, and some onion honey mustard. Max added some of the extra chicken breast pieces to his.
Then we dug into the pizza. Holy yum!
It was so delicious and perfect amount of bbq sauce, if I do say so myself.
I’m super stoked that I have a piece left over for tomorrow or Monday.
