My mother is definitely the cornerstone of my family, and this delicious dish from Barilla® pasta reminds me of home. Spaghetti with Chipotle Ground Beef and Cotija is a simple dish, that pleases a crowd. The addition of chipotle and cotija gives this familiar dish a special Latin flair. 1 lb package of Barilla® Spaghetti
1 tbsp Extra virgin olive oil
1 pound 93/7 lean ground beef
1/2 cup chipotle in adobo sauce
1 can (28oz) crushed tomatoes
Salt and pepper to taste
½ cup poblano peppers, diced (optional)*
½ cup grated cotija cheese
Bring a large pot of water to a boil and salt it well. You'll want the water to taste like sea water, that's the only way to get your pasta to have any flavor.
Meanwhile, heat a pan to medium-high heat and sauté the beef in olive oil for 4-5 minutes or until browned and crumbled.
Add the chipotle sauce and poblano (if using), and sauté for 1 minute.
Add the crushed tomatoes, season with salt and pepper; simmer for 3-4 minutes. If your sauce tastes a bit metallic, add a bit of sugar to round out the flavors.
Cook the pasta according to the package directions, drain and toss with the hot sauce, top with the cheese before serving.
