Barbecue Chicken Sandwich with Red Cabbage Slaw

I can't image why my husband is hesitant to sink his fork into the meals I make him lately. After all, it's not like I use him as a test-taster for my frequent experiments in the kitchen.

The other night when I placed this BBQ chicken sandwich in front of him, he looked at me as though I'd put something noxious on his plate. When I asked him what the problem was, he responded with - I never know what you're going to put in my food.

I suppose I deserve the reputation. I tend to add a variety of healthy ingredients into otherwise standard dishes like this barbecue chicken sandwich - however, this time my sandwich recipe was free of experimentation. It was simply a sandwich with slaw.

Healthy cooking note . . . Watch the ingredients in the barbecue sauce you purchase. I picked up this sauce at Costco without reading the ingredients. When I looked at the huge bottle I'd purchased, the very first ingredient was high fructose corn syrup. I was highly disappointed that my money was going to be poured down the drain. Look for sauces free of high fructose corn syrup, try for sugar that is lower on the list of ingredients.
