I was contacted by ViSalus, a nutrition company, to develop a recipe or two using their Vi-Shape Shake Mix. The mix is absolutely tasty, and I have enjoyed creating recipes because it's so versatile! If you missed my shamrock shake, you can see it here.
Today I am bringing you a sugar and gluten-free banana muffin that is packed with guilt-free goodness.
Ingredients
Makes 8 Muffins
4 scoops Vi-Shape Shake Mix
1/2 c stevia (for baking)
2 ripe bananas, mashed
4 tbsp butter, melted
1/4 tsp baking powder
1/8 tsp light salt
1 egg
1/4 c skim milk
1/4 tsp vanilla extract
1/4 c chopped walnuts
Directions
Preheat oven to 350 degrees
Mix together wet ingredients (butter, stevia, bananas, vanilla, milk)
Mix together dry ingredients and slowly add to wet
Stir in chopped walnuts
Line cupcake pan with paper baking cups, fill cups approximately 3/4 full
Bake at 350 for 20 minutes
Remove from pan immediately
Enjoy!
