ARIA Welcomes Salt & Ivy Café and Patio Bar.  ARIA Resort & Casino’s newest restaurant, Salt & Ivy Café and Patio Bar, will offer all-day dining options featuring hearty breakfast selections, California coastal-inspired dishes and specialty cocktails.

Breakfast

Salt & Ivy’s breakfast menu will offer a selection of morning fare, including the Chicken & Waffle made with Crispy Mary’s Chicken, Creole cheddar cheese, bacon, and chive waffles, served with spicy honey syrup; and Orange & Cranberry Parfait with homemade vanilla yogurt, granola, orange, cranberry compote, and pomegranate foam.

An ARIA staple, the Dutch Baby Pancake will combine a large German hotcake, served in a cast iron, with the choice of three different accompaniments such as blueberries and lemon curd with maple syrup and whipped cream; Serrano ham and Mahon cheese with sunny-side-up eggs, baby heirloom tomato and fresh herbs; and ‘Heavenly Veggie’ with sunny side up eggs and buffalo mozzarella.

Lunch

Zesty appetizers, salads and entrées will be featured during lunch, including shareable Baja Fish Tacos, served crispy style with guacamole and salsa roja; Noodle Salad, with rice noodles, house-made pickles, mizuna, tatsoi and Thai herbs, tossed with a chili vinaigrette; and a Steak Sandwich, with shaved prime rib, Creole cheddar, Dijon aioli and arugula.

Dinner

The evening hours will present a menu full of meat and seafood options consisting of a raw bar, hot and cold appetizers and hearty entrées. Highlights will include Oysters on the Half Shell, seasoned with ginger scallion ponzu, apple cider and cocktail sauce; Lobster Putanesca, with Maine lobster, olives, capers, cherry tomato and basil; and Colorado Lamb Chop, served with garlic scape, peas and heritage carrots.

Beverage Program

Salt & Ivy’s beverage menu includes a selection craft cocktails, which can be enjoyed on the outdoor patio or bar, surrounded by a lush garden landscape. To pair with breakfast, bottomless bellinis, mimosas and bloody marys will be available, with the choice of Prosecco, Rosé and Veuve Clicquot. Hand-crafted cocktails will be offered daily during lunch and dinner, such as the Banana Smash. Mixed with Ambros Banana Whiskey, lemon, ginger and rosemary; and Kiss My Bubbles, made with Absolut Elyx Vodka, aloe vera, elderflower, strawberry, lime, simple syrup and prosecco.

Breakfast: 6 a.m. – 11 a.m.

Lunch: 11 a.m. – 3 p.m.

Small Bites: 3 p.m. – 5:30 p.m.

Dinner: 5:30 p.m. – 10 p.m.
