Picking Apples

Its almost hard to believe that its a year since I started this post and haven’t got around to finishing it off and sharing it.

We had booked a quiet weekend away at Big Bear Lake, a few hours away from Brendon and Kelly’s home.  Paxton was a few months old and we thought a cottage on the lake would be a great way to chill and take walks with a 3 month old baby. I had forgotten how crazy it is to pack for a baby and a dog, but we eventually hit the road with a “warning” from the owner of the cottage to get there early as the bad weather was moving in, and would be there just after lunchtime.  We had just reached the village and found our cottage when the sky turned dark and the snow began to fall. Within a few hours the hills were transformed into a winter wonderland.

The snow fell all afternoon and during the night, and we woke to a spectacular sight of the lake and surrounding hills.  With the morning, came the sun, and we headed out with baby, dog, and camera in hand. Pontoof, their incredibly cute French Bulldog, loved the snow and ran around like a crazy little guy with me attached to the end of his lead.

The snow had brought the apples to the ground and the trees were glistening with melting snow and juicy apples. Thank you, to all those who unknowingly shared their apples with us.

I thought I would share my dearest friend Lee’s delicious apple crumble with you.  Lee, the bravest and most beautiful woman I have ever known, lost her fight to diabetes a few years back. She fought bravely through years of illness, pain and heartache, never complaining and living life to the full even with her severe disabilities caused due to her illness.  I always think of Lee when I make this Apple Crumble,  its a no fuss, quick and easy recipe, with ingredients that you will have in your pantry, so can be made at the last minute. Lee used to make this with tinned apples to make it even easier, but if you use fresh apples poach them for 10 minutes before putting in the pie dish.

Apple Picking and Lee’s Apple Crumble
Author: Lee O'Connor Recipe type: Baking Serves: 6 Prep time: 10 mins Cook time: 30 mins Total time: 40 mins Print   Ingredients
  • 1 cup flour
  • 1 cup castor sugar
  • 5ml baking powder
  • ½ cup butter
  • cinnamon
  • 1 tin apples
Instructions
  1. Preheat oven to 180ºC.
  2. Grease the bottom of a pie dish with a little butter.
  3. Spread the apples out into the pie dish and sprinkle with cinnamon.
  4. Mix together the flour , castor sugar and baking power.
  5. Make a well in the middle and crack the egg into the mixture and mix until crumbs form.
  6. Melt the butter and mix into the crumble mix and combine.
  7. Spread over the top of the apples and bake for 30minutes.
  8. Serve with custard or ice cream.
