Apple Cinnamon Protein Pancakes #Sweatpink

Before I make your mouth water with my pancake recipe, I have to share some news! ;)

Last week, I received an email that really boosted my spirits. I was feeling a little bit blah after applying for a job and not getting an interview, so the email from Fit Approach, welcoming me into the Sweat Pink Community as an ambassador was super up-lifting. Exactly what Sweat Pink is all about, right? Up-lifting. If you don’t know what Fit Approach or Sweat Pink is don’t worry, I didn’t either until a few months ago.

When things like #sweatpink started showing up in tweets on my Twitter feed, and a blogger I follow posted that she had become a Sweat Pink Ambassador, I became curious. So, I found the Fit Approach website and began investigating. I learned that Fit Approach was founded by cousins, Jamie and Alyse. I also noticed that the culture of motivation, encouragement, and inspiration that they created was very apparent amongst their healthy living community. Those involved share their struggles and accomplishments and engage in lifting each other up with a tweet, comment, picture, like, or post. The best part is that anyone can get involved and share their story. A true source of “fitsperation,” if I do say so myself. I am honored that I was chosen to be an ambassador, and can’t wait to sport some pink laces, along with, incessantly inserting #sweatpink in all my tweets

I am so thankful to be apart of the health and fitness blogging community, as well as, the social media enthusiasts. I feel like I have already learned so much from fellow bloggers, and gained so much support from my readers. So, I want to thank you whole-heartedly for visiting my blog.

Now for the main attraction:

Apple Cinnamon Protein Pancakes

Ingredients:

  • 1 Cup Old Fashioned Oats
  • 2 Scoops Vanilla Protein
  • 1 tsp Cinnamon
  • 1/2 tsp Baking Soda
  • 1/4 Cup Almond Milk (or any milk)
  • 4 eggs
  • 1/2 Large Apple (any apple, mine was a Granny Smith)
  • optional: Almonds, Walnuts, White Chocolate Chips

Method

  1. Throw everything minus the apple into a blender. 
  2. Slice half an apple into very thin slices
  3. Heat skillet and spray with cooking spray.
  4. Pour batter onto pan (about 1/4 cup).
  5. Places 2-3 apple slices onto the batter poured in the pan.
  6. When bubbles appear, flip the pancake.
  7. Let the other side cook 2-3 minutes.
  8. Repeat for remaining pancakes.

That was last nights dinner, but it made enough for leftovers this morning!
