Andhra Egg Curry
Eggs are a wonderful and nutrition rich food which are used all over the world in different cuisines and dishes. Owing to their versatile characteristics, eggs can be integrated into any recipe with ease. Here is a simple Andhra egg curry with savory spices and that makes a delightful delicacy.
Ingredients:
Boiled Eggs – 10
Tomato – 3 chopped
Onion – 2 finely chopped
Tamarind puree – 1/2 cup
Water – 1 cup
Oil – 3 tsp
A few cloves of Garlic
Green Chilli – 1 cut up
Salt to taste
Chilli powder – 1 tsp
Turmeric powder – 1/4 tsp
Coriander powder – 2 tsp
Ginger & garlic paste – 1 tsp
For Tempering:
Urad dal – 1 tsp
Mustard seeds – 1 tsp
Cumin seeds – 1 tsp
A few Curry leaves
Andhra Egg Curry
Preparation:
In a pan, heat oil and add mustard, cumin and curry leaves. Fry for a minute or until they start sputtering.
Thereafter, add chopped onions, green chilies and fry till onions turn golden.
Add ginger garlic paste and sauté till you feel their aroma. Thereafter, add tomatoes and a bit more salt and fry till tomatoes turn all mushy and tender.
Add red chili powder and sauté for 1 minute.
Add the turmeric powder, salt and coriander powder and mix it well
Next, add the tamarind puree, water and eggs and let it cook for about 10 minutes
Here, your Egg curry is ready. It is best had with steamed rich and doloplus ghee.
