Adventures in Cooking: Part III
Lately I’ve been in the kitchen. That is getting to know my new kitchen complete with an island (island sink), a new oven/stove and lots of counter space. Sometimes you just get it right without a lot of effort! Below is my omelet for a Saturday evening meal.

Omelets can be as creative as you like and made with or without cheese, here’s my recipe:
- 4 large eggs
- 1 TBS – 2 of soymilk to whip into the eggs (for a nice fluffy omelet)
- 1/2 medium ripe avocado, diced
- 1/2 large heirloom tomato chopped
- chopped green onions
- 1 TBS olive oil
- 2 artichoke hearts
- 1 oz leftover wild salmon (from lunch) broke into pieces
