An Egg-celent Choice for a Quick, Easy Meal!

Lately I’ve been in the kitchen. That is getting to know my new kitchen complete with an island (island sink), a new oven/stove and lots of counter space. Sometimes you just get it right without a lot of effort! Below is my omelet for a Saturday evening meal.

An Egg-celent choice for a quick, easy meal!

Omelets can be as creative as you like and made with or without cheese, here’s my recipe:

  • 4 large eggs
  • 1 TBS – 2 of soymilk to whip into the eggs (for a nice fluffy omelet)
  • 1/2 medium ripe avocado, diced
  • 1/2 large heirloom tomato chopped
  • chopped green onions
  • 1 TBS olive oil
  • 2 artichoke hearts
  • 1 oz leftover wild salmon (from lunch) broke into pieces
Heat skillet with olive oil, add in green onions, pour in egg mixture – scrunch egg batter from pan sides with spatula and let egg fill out into shape of pan to make a fluffy egg base, add in remaining ingredients and cook until eggs set. Flip and enjoy!
