An Easy & Healthy Dinner

I’ve consumed this meal 3 times in the last 7 days. True story. It’s so fresh, light and yet filling. If you want to add meat—-cook that over lower heat first and then set aside. These directions are for a single serving: first, put the olive oil in a large skillet and start warming it up over high heat. While you’re waiting—prep your veggies. I used 1/3 cup of the following: bamboo shoots, snow peas, celery, red pepper, mushrooms, green onion, carrots and beef. Chop all of your veggies and place in a bowl, add the garlic salt and pepper and stir to coat. When your pan is hot, add the veggies and stir fry 4-6 minutes. There are two veggies that you can use as your ‘timer’…you’ll know its ready when the snow peas are bright green and the carrots are slightly tender. You want your veggies to be fresh & crisp, not soggy! If adding meat, return it to the pan to warm it up. Serve on top of a Jasmine Rice and dip into the Spicy Peanut Dipping Sauce. Enjoy!
