As the famous Chinese saying goes: “Up above there is heaven; down below there are Suzhou and Hangzhou”, which praises the virtues of these two cities in their respective Jiangsu and Zhejiang provinces, as well as their cuisines. Hyatt’s chef draws inspirations from his culinary exploration trips to the Jiangnan area.
From the taste of the freshest seasonal ingredients, to the cooking techniques influenced by the unique environment, he noted down all his new findings in his very own culinary diary. After returning to Beijing, every small encounter during his trips was infused into this special menu, bringing a piece of Jiangnan delicacy to the capital city.
Gathering the seasons’ best offerings in Jiangnan: the freshness of the bamboo shoots accompanied with preserved ham’s richness becomes the most delicious celebration for the season of spring; when summer starts, Longjing tea brings a refreshing aroma to the tenderness of the shrimps, which is the perfect light dish choice; nothing beats a bowl of “Songsao” fish soup to warm oneself up in the cold weather, while the nutritious ingredients help maintain good health.
