These past few weeks, we are still harvesting many veggies from our garden. Let’s see what we harvested, shall we?
3 lovely aubergines
2 more pumpkins! The 1st butternut & the 2nd Uchiki Kuri! :)
What else?
The 1st long yellow beans, 500 gr!
And this morning, I collected the 1st long green beans: 450 gr!
And we got this lovely harvest, a few days ago:
3 lovely smaller yellow courgettes, 1 bigger Summer leek, some cut away Asian lettuce leaves, some white chard & 2 Chioggia beets! We mostly peel them, cut them into wedges & roast them int the hot oven seasoned with black pepper, a fruity olive oil, some black pepper & some sea salt. Mingled with clean hands & put into the hot oven for about 30 minutes on 200°C. Yummy! The interior is lovely white & pink multicolored & these beets are a bit more sweet too. Just look,…lovely, hey?
We also stir fry the leaves & stalks! :) Very yum!
And we look again to the beautiful interior of these special more sweet-like beets! ;)

Tomorrow, I will give you a lovely recipe where I roast these beauties in the hot oven & make a lovely vegan dinner with them & with black kale too. ;)
