A Different Whole30 Breakfast

After 25 days of eggs and turkey bacon for breakfast, I wanted something a little different…  I remembered seeing something on Tina’s blog, Carrots n’ Cake, that I thought just might work for this Whole30 adventure.

“Oatmeal” Minus the Oats was a hopeful choice.

I followed Tina’s recipe exactly and came up with a big bowl of goodness. The texture was a little like oatmeal, but probably more like smooshy grits. I know that might not sound awesome, but the taste was sweet and cinnamon-y with zero hint of egg (that was my main concern).

I know you are curious, so I will just share all the ingredients I used, but be sure to visit —> Carrots n’ Cake. <— for the complete recipe!

  • 1/4 cup chopped pecans
  • 2 tbsp ground flaxseed
  • 1 tsp ground cinnamon
  • 1 banana, mashed
  • 3 egg whites
  • 1/2 cup unsweetened almond milk
  • 1/2 tsp vanilla extract

In my “oats” I used my homemade almond milk. I really think I am hooked on the stuff!

Oh, and by the way, I increased my milage yesterday and am up to six! I was planning on doing five, but I felt really good so I just kept going for one more! Hmmm… Maybe I can contribute my performance to this clean eating?!
