So the big day is coming up... .The Super Bowl that is. I always think it is good to offer guests healthy and some not so healthy options. Since my healthy eating mantra involves sticking to mostly healthy foods and eating the occasional unhealthy burger.nachos.donut.gravy cheese fries.... you know or whatever I find. For this week I am dedicating blog posts to both healthy appetizers for your Super Bowl Party and some not so healthy appetizers. All of these appetizers are my guests usual favorites so rest assured these recipes are where its at! Let's start the week off with some healthy appetizers!
Buffalo Turkey Meatballs
This is my new favorite appetizer because it tastes like a full fat appetizer, but it is healthy!You can roll the balls in advance so it will save you some time when you are entertaining guests. The trick to these is grating or finely chopping onions to add to the meatball mixture. It makes them super moist and delicious. You can serve these with an easy Greek Yogurt blue cheese dressing.
Buffalo Baked Zucchini Fries
You will never miss actual french fries when you make these baked zucchini fries. I made them buffalo, but you can always make them as plain zucchini fries and make a honey mustard dipping sauce or even low sugar ketchup. If you do make them buffalo make sure you toss them in the sauce at the last minute. They will get too soggy if you toss them early.
Mediterranean Pita Pizzas
I love pita pizzas. They are super easy to make and individuals can put whatever toppings they want on them. These pizzas have charred eggplant, olives, tomatoes and feta. They were so flavorful and delicious. You can cut them into wedges or serve an individual pita pizza to guests. Don't forget to serve these with a side of Greek yogurt!
Sweet Potato Chili
Chili is so yummy in these cold winter months! I like this chili because it is sweet and spicy. It is hearty and you will never miss the meat, or the fat for that matter. You serve it with some corn bread or crusty bread boules.
Coconut Shrimp with Mango Sauce
This is a healthy play on coconut shrimp. Grilling shrimp takes no time at all and you can marinate them the night before. You can keep the shrimp on the skewers and guests can take a skewer and watch the game!
