Salads are always a good way to bump up the servings of veggies I should eat each day. When I'm super busy and holiday gatherings tempt me with less nutritious meals, getting a few extra salads on the table is an easy way to eat healthier.

Soups are another way to get more nutrition into the holiday season, and almost always make a healthy dinner (skip the soups with heavy cream and fatty meats). I love that I can make a large batch of soup on the stovetop or in my slow cooker and have enough to freeze for healthy lunches and quick weeknight meals.

Sandwiches and wraps please almost anyone I know. Find a whole grain wrap (I like Flatout's collection) and wrap up your favorite salad. We love shrimp for its low calorie and high protein content, but you could easily replace the meat in any of these healthy dinner recipes with whatever leftover meat you have on hand like chicken, beef, or pork.

I would be remiss if I left out egg recipes. Eggs are an inexpensive, fantastic protein choice that can be served with almost any vegetable you choose. My best-loved dish is the Mexican Baked Eggs, but when Mr. Mike wants to poach eggs (he makes a fantastic poached egg!) then a pile of roasted sweet potatoes is all I need to be happy.
