Can you believe it's only 4 days until Christmas?? It sure did sneak up fast this year!
Are you all ready? Christmas tree decorated? Presents wrapped and under the tree? Holiday baking done?
Well in case you haven't quite finished all your baking (can you ever really have enough holiday treats?) I have another recipe for you to add to your collection! I made these Chocolate Ginger Cookies for my last study group meeting of the year where we had a little Secret Santa gift exchange, some holiday beverages and a few goodies. The holiday beverages were definitely a necessary addition. It was a long and painful session of looking at gross skin pictures to help us study for the dermatology portion of our exam. Why the general internist needs to be an expert in dermatology is beyond me. There is a whole separate 5 year training program for that exact reason. Oh Royal College you baffle me. But needless to say it made for a pretty enjoyable study group!
These cookies are made with both almond and coconut flours to give them a unique flavor and they include both ground ginger and cacao powder for some added health benefits. Ginger is great for the digestive tract, being both an anti-spasmotic as well as gas reliever. It also acts as an anti-inflammatory and has potent anti-oxidant effects. For those of you suffering from gastrointestinal issues I suggest a daily dose of ginger to help relieve your symptoms. You might be surprised at how potent this natural remedy is. And when you can get your daily dose from a chocolate cookie how could you complain?

Chocolate Ginger Cookies (Paleo, GAPS, Gluten Free, Egg Free)

Ingredients

2 1/2 cups blanched almond flour1/2 cup organic coconut flour4 TBSP organic cacao powder2 TBSP + 1 tsp organic ground ginger (I use this brand) 1 TBSP ground cinnamon (I used this kind) 1/2 tsp aluminum free baking sodapinch sea salt
1/2 cup full fat organic coconut milk (I recommend this brand) 1/4 cup melted organic coconut oil1/4 cup melted grassfed ghee1/4 cup honey or maple syrup (honey for GAPS) 5 TBSP water 1 TBSP organic vanilla extract 

Directions

1. Preheat oven to 350F2. Combine dry ingredients in a large bowl3. Add the wet ingredients and mix well with a pastry blender4. Using your hands, form a large ball with the dough5. Transfer to a piece of parchment paper6. Place another piece of parchment paper on top of the ball of dough7. Using your rolling pin, roll out the dough until it is 4-5 mm thick8. Using your cookie cutters, cut the cookie shapes and transfer to a baking sheet9. Cook the cookies for 15-17 minutes (this will depend on the size of your cookies)
10. Remove from oven and let cool
11. Serve and enjoy!
Yield: ~40 cookies (will depend on size of cookie cutters)
