10 Minute Blueberry Pork Chops (SCD, GAPS, Paleo, Pork)
"Are you eating blue meat?!"
That is what my mother asked me when she saw me eating these pork chops one night. And I had to say yes since the blueberries do turn the meat blue. It might look gross but trust me these taste good! So who cares what they look like. At least I don't.
I make these on a fairly regular basis because they are super easy, quick and tasty. A pretty good combo if you ask me. I wish I could say I had the time to make elaborate dinners every night but during residency that is just not feasible. So these pork chops are an easy solution for nights that are rushed. These only have three ingredients and are ready in less than 15 minutes. How is that for easy and fast? And so much better than fast food! (Don't even get me started...)

Ingredients

5-6 pork chops (boneless or bone in both are fine)
3-4 TBSP coconut oil
1 1/2- 2 cups Fresh or frozen blueberries

Directions

1. Place a large pan on the stove on medium heat.
2. Place coconut oil and blueberries in the pan and allow to heat until blueberries start to break apart (a couple minutes)
3. While oil is melting rinse your pork chops and pat dry
4. Add the pork chops to the pan, cooking for 3-4 minutes per side (Ensure your pan is at full heat before adding your pork chops or they won't cook nearly as quickly)
5. Remove from heat and enjoy!
NOTE: Cooking pork chops can be a challenge as it is really easy to overcook them. A good rule of thumb is that they should still be slightly soft in the middle (if they are firm all over they are overcooked) and depending on the size of your pork chops you may need to alter the cooking time slightly.

Now wasn't that easy??
I like to pair these with cauliflower rice or zucchini noodles. Both are delicious if you ask me!
