Zucchini Brownies with One Minute Chocolate Frosting

Since we're in harvest time, many of us are trying to use up or can our garden goodies.  
I actually never grew any zucchini.  But my mom had an abundance of it.  So I of course agreed to take some off her hands.
Besides what I grated and freezed (for future recipes), I kept some for a certain recipe I've been meaning to make for awhile.  As you know I made some delicious Zucchini Chocolate Cake last year, but my husband loves brownies.  I had to give it a try!

Zucchini Brownies with One Minute Chocolate Frosting


For the brownies, I used this recipe from I Am Baker and adapted it a little.

Ingredients:  
  • 1/2 cup applesauce
  • 1 1/2 cups white sugar
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups finely shredded and drained zucchini
  • 1/2 cup chocolate chips (optional)

First, preheat your oven to 350 degrees and spray your 9x13 pan with nonstick cooking spray.

Mix together your sugar, vanilla and applesauce until combined about 2 minutes.

In a medium mixing bowl, sift together flour, cocoa, baking soda and salt.

Feel free to get your little helper to do some stirring too!

Add the flour mixture to the sugar mixture and mix until just combined.

Add your zucchini and chocolate chips and fold them in by hand.

Scoop into your pan and spread with your spatula.  Then bake for 25-30 minutes.

Cool your brownies for about 30 minutes, then while still warm add your frosting.  Spread the runny frosting and let the entire thing cool. The frosting is a simple One Minute Chocolate Frosting from The Yummy Life.

It is so decadent and rich!  You never would think it was full of zucchini and applesauce.  Bonus!
