The image below is Ernest Hemingway’s hamburger recipe, via the BBC and the John F. Kennedy Presidential Library. Is it any surprise that Papa liked his burgers pink and juicy in the middle?

I love the sheer amount of ingredients in this burger. India relish? Mei Yen powder? Wine…in a burger? I’ve cooked with wine many times, but it’s never occurred to me to put it in a burger. And in the intro paragraph, the recipe even suggests chopped almonds. What?
You’ve got to believe Papa Hemingway had a granite stomach with all those ingredients mixed together.
And this recipe is absolutely right about the cooking temperature. When you use a frying pan, you want that oil hot, but not smoking. Same with a grill–get that sucker hot before you put the burgers on. The best burgers are crispy on the outside and juicy in the middle.
Now I’m hungry and really want to try this recipe out. Who’s with me?
