Fusion cooking is an often despised and misunderstood idea. The term “fusion” is most typically used to describe the act of fusing two substances or ingredients, usually through the use of heat. This can refer to anything from nuclear fusion (the process in which two or more nuclei fuse to form a single, bigger nucleus) to the fusion of two metals to produce an alloy to the fusion of two concepts to generate a completely new principle. Fusion cuisine refers to this third example of fusion, which is essentially the process of combining one or more cooking traditions and techniques to create an entirely new approach to create a new kind of cuisine or meal.
