Wholemeal Pizza

Ingredients:
500g Wholemeal Strong Flour
1 Tsp Salt
1 Tbsp sugar
1 Sachet of fast acting yeast
300ml Warm water
Small can of tomato purée
2 Tsp Italian herbs
1/2 Tsp garlic powder
1/2 Tsp salt
200g Mozzarella
Small onion
Small green pepper
6 Tbsp frozen sweetcorn
Small tomato
Olives

In a mixing bowl add wholemeal flour and salt

In a measuring jug add the warm water, olive oil, yeast and sugar. Give it good stir and allow to stand for a few minutes.

The yeast will activate and look airy and frothy.

Pour the yeast liquid into the flour

Either by hand or using a dough hook, start to mix and knead the dough.

Once the dough forms into a ball, knead for a further few minutes.

Remove the dough from the bowl, sprinkle some flour in the bowl. Place the dough back in the bowl, sprinkle a little more flour and cover with cling film and place in a warm place for 1 hour.

After 1 hour, the dough should have doubled in size. Which means it’s now ready for the next stage,

Remove the dough from the bowl, and knead slightly to knock out some of the air.

Divide the dough into 6 even balls for small pizzas or 3 for larger pizzas.

One by one, make each dough chunk, and roll into a ball. Start to roll out on a floured surface.

Place the dough on to a baking stone.

If you are planning to freeze some of the pizzas then you will need to part oven bake the bases for 5mins at 220c. This will help the pizzas cook from frozen, and makes it easier to work with.

Into a small bowl or jug, add the contents of the small tomato purée can.

Add a can of hot water, italian herbs, salt and garlic powder

Stir until fully mixed.

Evenly spread the tomato sauce over all the pizzas.

Sprinkle mozzarella over the pizzas

Top the pizzas with the toppings of peppers, sweet corn, tomatoes, onions and olives.I decided to bake one for the kids dinner, and freeze the remaining 5 pizzas.

Wrap the pizzas which you are planning to freeze in foil and freeze for another quick meal when you have limited time.

If you are planning to use the pizza a little later, then cover and place in the fridge until ready to use.

Bake in the oven for 8-11mins ( or 10-13mins if frozen) at 210c.

Serve immediately, and enjoy!
