This White Chocolate Oatmeal Cookie Dough Bars Recipe is amazing! Soft, chewy, and very, very rich, it’s a fantastic accompaniment to coffee!Our boys, of course, love these in any way, shape, or form! They do like to have a glass of milk handy. I love to use a mixture of our favorite bars and cookie recipes on our holiday cookie trays–and these certainly make a statement.
I’m always looking for fast to fix recipes that are real show-stoppers. I did slightly alter the original recipe to include white chocolate chunks, not white chocolate chips, and to solve an issue of frosting dryness. The end result? Perfection! In fact, I think you could reduce the frosting recipe by half and still end up with excellent results. From Picky Palate.

I made a slight variation. My frosting turned out very dry and crumbly. I added the Milk (and also an extra 4 Tablespoons of Butter). I think, however, that just the addition of the Milk will create the desired result.
These are very rich. Slice into small squares to serve.
Ingredients
- Bars:
- 1 Stick (8 Tablespoons) Butter, Softened
- 1/2 Cup Granulated Sugar
- 1/2 Cup Brown Sugar, Packed
- 1 Egg
- 1 teaspoon Vanilla Extract
- 1 Cup Flour
- 1/2 Cup Quick Oats
- 1/2 teaspoon Kosher Salt
- 1/2 teaspoon Baking Soda
- 1 Cup White Chocolate Chunks Frosting:
- 1 Stick (8 Tablespoons) Butter, Softened
- 1/2 Cup Granulated Sugar
- 1/2 Cup Brown Sugar, Packed
- 1 teaspoon Vanilla Extract
- 1 Cup Gold Medal all-purpose flour
- 1/2 Cup Quick Oats
- 1/4 teaspoon Kosher Salt
- Milk (no more than a few Tablespoons)
- 1 Cup White Chocolate Chunks
Instructions
- 350* Oven. Grease 8 x 8 pan. Set aside.
- Cream Butter and Sugars until fluffy and light.
- Add Egg and Vanilla Extract. Stir to mix.
- Add Flour, Oats, and Salt. Stir until just combined.
- Add in White Chocolate Chunks. Stir in.
- Place dough into pan and bake 350* for 30-35 minutes or until golden brown. Frosting
- Cream Butter and Sugars until fluffy and light.
- Add in Vanilla and mix.
- Add Flour, Oatmeal, and Salt. Mix.
- Add Tablespoons of Milk at a time until you reach desired spreading consistency.
- Stir in White Chocolate Chunks. Prepare
- Spread Cookie Dough Frosting over cooled White Chocolate Chunk Oatmeal Bars.
