What’s For Dinner Button

I love to cook, but I don’t always have time to do so in the manner I would like. This weekly journal is a way to keep it real and show that while my intentions are good, sometimes life and all of its activities get in the way of serving a delicious, home-cooked meal and that it is perfectly okay.

- Saturday: Being home over the weekend with no major plans meant it was finally time for some much-needed deep cleaning in the house. Needless to say, by the time everyone was finished with their respective chore lists, everyone was moving quickly towards hangry and taking the time to actually cook something was out of the question. In a nod to Cinco de Mayo, which Mexicans do not celebrate in Mexico, we hit Taco Bell because that is not real Mexican food either.
- Sunday: I have teasingly called this week my birthday week because my birthday is either always on or before Mother’s Day so why not get the full week? I joked that I didn’t have to cook or plan anything this week, and Holly took me seriously. She not only planned out the entire week’s menu, she went grocery shopping with her brother and cooked dinner tonight. Jim helped her with the burgers, but she made roasted asparagus and rounded out the meal with French fries. Not bad for a thirteen-year-old!
- Monday: A bit of a snafu tonight when the meal Holly had planned involved marinating meat overnight. So, Momma to the rescue with spaghetti carbonara. There were no complaints.
- Tuesday: Holly, in all of her careful planning, was thwarted by Connor when I happened to mention to him that I would much prefer tacos as my birthday meal rather than a new macaroni and cheese recipe she wanted to try. While she may have pouted a bit, I saw her devouring her tacos as much as the rest of us. Plus, I know that recipe will not go to waste.
- Wednesday: No macaroni and cheese tonight, but leftovers did happen. It was a rough day with the dogs, so Connor was exhausted. Jim didn’t get home until late, and I was perfectly content eating a sandwich. Sometimes, you just have to concede to the masses.
- Thursday: Macaroni and cheese tonight, and it was delicious! Holly certainly knows how to select recipes. It was easy too, so I suspect we now have a new recipe in the rotation.
- Friday: Jim and Holly had a father-daughter night, so it was just me and the boy for dinner. He was craving Panda Express, and since I didn’t want to cook it was perfectly fine by me.
