People are forever asking how I manage everything with such a busy schedule. I love to cook, but I don’t always have time to do so in the manner I would like. This weekly journal is a way to keep it real and show that while my intentions are good, sometimes life and all of its activities get in the way of serving a delicious, home-cooked meal and that it is perfectly okay.

  • Saturday: Holly and I took advantage of some downtime during the convention and ordered room service while watching horrible movies on television. The food was okay, the movies were just plain awful, but we had a blast.
  • Sunday: Holly and I thought we were coming home to a home-cooked meal. Instead we came home to a “fend for yourself” night. Anything we wanted to eat was a letdown after thinking we were going to get something hot and fresh and something we didn’t have prepare ourselves.
  • Monday: With yet another snowstorm hitting us, tonight was a night for comfort food. Spaghetti carbonara to the rescue! There really are few things better than cheesy, bacon-y pasta. Except maybe tacos.
  • Tuesday: Holly has an even crazier week than usual with poms tryouts three nights this week. I wanted her to have a healthy, filling meal that she could eat as leftovers for the rest of the week if necessary, so I adapted this Brazilian Black Beans recipe to make it vegetarian and served it with rice and a salad. Even without the bacon, I thought it was pretty tasty, and I didn’t hear Holly complain.
  • Wednesday: To make up for the lack of meat in yesterday’s meal, tonight I opted to make chicken enchiladas verdes. With nothing more than pepper jack cheese, chicken, pinto beans, and a little sour cream, this turned out surprisingly delicious for such a simple meal. I can’t wait to have the leftovers!
  • Thursday: Leftover Thursday to the rescue! Holly’s schedule was a bit weird this week as she had poms tryouts in addition to dance classes, so her hours tonight were a bit later than normal. I had a manicure appointment as well, so I was not home to cook anything. Thank goodness we still had leftover enchiladas to fill the void!
  • Friday: Sometimes, you just need to do something for which your state is famous. For Wisconsin, it is a Friday night fish fry, and that is exactly what we had after dance. It never fails to amuse me that the best fish fries are held at bars but you go where the food is good, right?
