I cooked this week! And since I haven’t done one of these posts in well over a year, I thought I would celebrate my success by sharing what I made. It also gives you a glimpse into my evenings. You would think they would be easier with only one child at home, and in some ways they are. Then again, I lost my other chauffeur, so in some ways our evenings are crazier than ever.

  • Saturday: Jim surprised Holly and me with a fully prepared dinner upon our arrival home after our trip. He made chicken in the slow cooker for chicken nachos. He even had all of the fixings ready to go, including avocado, tomatoes, salsa, cheese, two different types of beans, etc. Plus, he made Holly brown rice to provide her a more balanced vegetarian meal. He made enough chicken and rice that this is something we will be eating for a few nights. I love when that happens!
  • Sunday: Today was the laziest of days. Holly took her time finishing her homework. Jim washed the cars. I did laundry and took a nap. Dinner was whatever we found in the fridge. And then we all snuggled together to watch another episode of “Stranger Things.” It was a good day.
  • Monday: Another lazy night for dinner. I had an evening appointment, Holly was at dance, and Jim did a long workout. By the time we all reassembled, preparing dinner was the last thing on anyone’s mind. Good thing we still have some of those leftovers from Saturday!
  • Tuesday: Halloween night has been anti-climactic for us the past few years. The kids have done their own thing with their friends, and we never get any trick-or-treaters at the house. Rather than stay home and lament the silence and empty cul-de-sac, we got a quick bite to eat at Noodles.
  • Wednesday: After finally getting groceries, I was able to make Sauteed Mushrooms with Cheesy Polenta for dinner. The weather has been so crummy – gloomy and rainy – that cheesy polenta/grits provided some much-needed comfort and warmth. The mushrooms were the concession to Holly’s vegetarianism rather than my regular shrimp and bacon. I missed the bacon but it was still delicious.
  • Thursday: Another gloomy day called for breakfast for dinner. Eggs,  bacon and toast never gets old and makes for a great way to end the day.
  • Friday: Yet another dreary day with dance. After a week of this weather and a full week of work, no one was interested in doing much more than eating out of the fridge. Jim ate up the remainder of the leftovers. I had an omelet, and Holly opted for fruits, vegetables, and some macaroni and cheese (from a box). Not an elegant way to end the week, but it worked.
