People are forever asking how I manage everything with such a busy schedule. I love to cook, but I don’t always have time to do so in the manner I would like. This weekly journal is a way to keep it real and show that while my intentions are good, sometimes life and all of its activities get in the way of serving a delicious, home-cooked meal and that it is perfectly okay.

  • Saturday: The first day of the holiday weekend saw us at my sister-in-law’s house for a cook-out. Unfortunately, it was too hot to actually have a cook-out, so we ate the burgers and chicken inside instead.
  • Sunday: Still brutally hot outside but that didn’t stop me from having Jim grill fish and shrimp for fish or shrimp tacos. I served them with homemade guacamole, a light cabbage slaw,  and chipotle lime crema. It was a perfect meal for such a miserably warm day.
  • Monday: Today was Connor’s 18th birthday. Normally, the birthday person selects the menu on his or her birthday, but Connor abdicated that responsibility this year. So I served deluxe  bacon cheddar burgers with a Russian tarragon dressing and cheesy funeral potatoes I made in the slow cooker. For his cake, he also abdicated responsibility so I made my mother’s chocolate chip cake with butter frosting for the first time. Everyone went to bed with very full bellies, which is always a sign of good food!
  • Tuesday: The first day back to work and school after a long weekend is always rough. That is why I thought the comfort of my favorite macaroni and cheese recipe with chorizo, cotija, and aged cheddar. It is easy and delicious and perfect for the various activities we had after work.
  • Wednesday: I knew tonight was going to be crazy, so I planned ahead and made a slow cooker Korean Beef that was ready when the boys got home from work. Connor made rice to serve alongside it that worked perfectly with the meal. My mother-in-law did not stop raving about it the entire time she was eating, and the leftovers were gone the next day. I would say that it was a success.
  • Thursday: Tonight was Holly’s last dance recital. Like last week, she and I were at the theater by 5 PM and had no opportunity to eat before we arrived. We ended up leaving the theater by 9:30 PM and found ourselves making a Taco Bell run on the way home just so we could go to bed without growling stomachs. Not the best thing to eat before bed but when you are hungry and a vegetarian at 9:30 at night, there are not many options available to you.
  • Friday: Holly went to a celebratory dance for the eighth graders, so it was just me and the boys for dinner. Jim wanted to stay home but we realized that there were no leftovers from the week. We had eaten up every single ounce of them for lunches. I think that was the first time that has ever happened. Anyway, it meant that we could not stay home, so we ended up at our favorite Mexican restaurant for dinner. Not a bad way to end the week.
