People are forever asking how I manage everything with such a busy schedule. I love to cook, but I don’t always have time to do so in the manner I would like. This weekly journal is a way to keep it real and show that while my intentions are good, sometimes life and all of its activities get in the way of serving a delicious, home-cooked meal and that it is perfectly okay.

  • Saturday: We had a late breakfast of pancakes and scrambled eggs, so we skipped lunch. By the time Holly was done with her dance rehearsal, we were all hungry and stopped at Chipotle for dinner. Chipotle is never a bad decision.
  • Sunday: Jim cooked again, this time making Spinach and Artichoke Grilled Cheese sandwiches. The filling essentially was spinach and artichoke dip, just spread over bread and toasted. I personally think Jim used the wrong bread, our normal multigrain bread overpowered the filling leaving Holly to claim it was rather tasteless. I thought it was tasty but would have been better on a grilled sourdough bread, where the filling would stand on its own.
  • Monday: One of Holly’s long dance nights and one in which I worked later than I normally do left Jim all alone with the pup, so dinner never really became a thing. We both scarfed down a quick sandwich and said to hell with the rest.
  • Tuesday: Jim cooked one last time before he left, making stuffed chicken breasts from the grocery store and Spanish rice. It is not something I would normally make for dinner, but I didn’t have to cook so who am I to complain?
  • Wednesday: Jim left this morning. Holly has four hours of dance every Wednesday evening. There was no way I am making a full meal for myself. I stuck with some cheese and crackers because I could.
  • Thursday: It is only day two without Jim, and Holly and I are already struggling to find time in the evenings to do normal things like eat. Tonight’s dinner was whatever we could find. She went with some fruit and a banana. I had some more cheese and crackers. I plan to make it up to her tomorrow.
  • Friday: One thing about my daughter is that she is probably one of the most considerate people you will ever met. When asked what she would like for dinner, she almost never wants to get something but would rather go home and make something. Tonight, she didn’t even want me to make something. Rather, she chose to make Velveeta Shells and Cheese  with tuna for dinner for both of us. I do love that girl of mine.
