What’s For Dinner – Week Starting 20 February 2016

In an effort to be a whole lot more organized this year, and because everyone is always posting what delicious food they make, here is what I have been serving my family for the past week. I also envision this being a detailed account of how I fail miserably at meal planning when life gets too busy. But hey, it’s real life. Speaking of real life, I am not and never will be a food blogger. If I ever were to post food pictures for you, I apologize in advance for how awful they are.

  • Saturday: After a long day at the dance studio – Holly had rehearsals and I was helping sew costumes and paint scenery – the last thing I wanted to do was cook. I recruited Jim to help me, and we ended up with a decent meal of dirty rice and corn muffins. No recipes as it was all from mixes, but it was perfect for the need for something easy.
  • Sunday: Holly and I were at the theater from 10 AM until 6 PM with a fifteen-minute break in there. I gave no thought to making dinner, and apparently neither did Jim. I left the boys to fend for themselves to reward their thoughtfulness, and Holly and I hit Noodles and Company on the way home. That Rice Krispy treat really hit the spot.
  • Monday: Mondays are just so awful. Holly does not even come home after school but heads right to the studio. I was working with my scenery crew painting while Holly was at her last two classes. We have no leftovers because we have slowly eaten them over the past week. Holly, thankfully, had packed the leftovers from yesterday’s Noodles trip and ate that. Jim and Connor had something; they did not leave me anything so I am not certain what it was. I ended up skipping dinner thanks to a big lunch and coming home to late to want to eat anything. Oops.
  • Tuesday: I made sure to make up for yesterday’s lack of dinner by making Skillet Chicken with Creamy Mushroom Sauce. I ended up serving it over rice. Given the fact that there were absolutely no leftovers, I’d say this was a huge success.
  • Wednesday: Wednesdays are usually our calmer days, but tonight Jim had an appointment and I had a parent/teacher conference for Holly. In order to still make a decent dinner for my ravenous family, I whipped up a family staple, Spaghetti Aglio e Olio. This is one of my favorite go-to quick meals when no one else is home. It is so simple and easy and yet absolutely delicious. I chop my garlic and make sure to be very generous topping it with Parmesan cheese. Voila!
  • Thursday: With ballet rehearsals in full swing, this means that it is time to get serious about painting and prepping all of the scenery. This is what I did while Holly was at dance for three hours tonight. Holly had an early dismissal so she was able to eat before we left. I did not have time to make anything, so I grabbed Jimmy John’s to eat while at the studio. One can never go wrong with Jimmy John’s.
  • Friday: Jim and Connor were at a home Forensics meet, so it was a girls’ night out for Holly and me. After much debate and checking out the wait times at various places, we settled on Fuddruckers’ as our dinner option. It was not my first choice, but the time spent with my girl is all that matters.

This week is certainly a good indicator of how the competition season is going to go. This time of year is never a quiet one; it makes the holiday season look like vacation. I am going to have to wrap my head around how to plan meals when I am not home for the entire weekend.
