What’s For Dinner – Week Starting 14 May 2016

In an effort to be a whole lot more organized this year, and because everyone is always posting what delicious food they make, here is what I have been serving my family for the past week. I also envision this being a detailed account of how I fail miserably at meal planning when life gets too busy. But hey, it’s real life. Speaking of real life, I am not and never will be a food blogger. If I ever were to post food pictures for you, I apologize in advance for how awful they are.

  • Saturday: I am home and finally have some time to relax and settle into domestic life. Earlier in the week, my girlfriend announced her longing for macaroni and cheese. I came to rescue and decided it had been a while since I made my homemade version. So, while prepping dinner for her family, I opted to make a double batch of it for my own family and served it with a spinach salad. It was a wonderful meal and the first time I have cooked and we have all eaten together at the same time in three weeks.
  • Sunday: Cooking relaxes me, so after a long and crazy month there is nothing I like better than making dinner for people. Tonight’s dinner was a very easy but delicious Green Chile Chicken Enchilada Casserole, along with refried beans. I do love feeding my family good food!
  • Monday: Being home again with no plans to travel for the near future has me in a cooking frenzy. Tonight’s dinner was a bit cumbersome to prep, but once all the ingredients were ready to go, it came together quickly. Crispy Baked Pasta with Mushrooms, Sausage and Parmesan Cream was easy and delicious, although I think I enjoyed it more than everyone else.
  • Tuesday: After two fairly heavy meals so far this week, I wanted to lighten things up a bit, so Grilled Buffalo Chicken Caesar Salad came to the rescue! Granted, while I thought it was an easy recipe to prepare, Jim had problems with it. As a result, there may have been a lot more garlic than necessary, which is not necessarily what you want in a salad. Still, there were no leftovers, which is my number one method of determining how successful a recipe is.
  • Wednesday: Tonight was one of the rare nights where Holly was actually home for dinner, and Connor had nothing either. I had another fancy meal planned, but the thought of spending all that time in the kitchen instead of with them bothered me. So I kept things easy tonight with tacos. Everyone loves them, and they take almost no time to make.
  • Thursday: Jim has been going into work around 3:30-4 AM every day this week. While he was as quiet as he possibly can be, he still tended to wake me while he was getting ready. This means that we both are just a bit tired this week, Jim more than me. When discussing dinner options for tonight, neither one of us had the energy to cook anything. Thank goodness for house guests! He came through with a delicious meal of brats and grilled veggies. Plus, he brought home Double Stuff Oreos. SO much better than the pizza I was planning to order.
  • Friday: I don’t know about you, but it was a long week. Everyone was home, but everyone showed signs of exhaustion by the time they got home, myself included. Tonight was the perfect night to order that pizza, sit around the table and catch up with everyone. In other words, it was an excellent end to the week.
