What’s For Dinner – Week Starting 13 February 2016

In an effort to be a whole lot more organized this year, and because everyone is always posting what delicious food they make, here is what I have been serving my family for the past week. I also envision this being a detailed account of how I fail miserably at meal planning when life gets too busy. But hey, it’s real life. Speaking of real life, I am not and never will be a food blogger. If I ever were to post food pictures for you, I apologize in advance for how awful they are.

  • Saturday: Jim and I do not celebrate Valentine’s Day per se, but since we were already going out to watch a friend perform with her band, we managed to get a dinner out of it too. We hit a local Italian place that was close to the bar hosting the band. It was not the greatest meal of all times, but it was a new restaurant for us.
  • Sunday: We are a family of breakfast lovers, so there was only one thing I wanted to make for dinner on Valentine’s Day – breakfast for dinner! Jim is actually our resident breakfast chef, so he served chocolate chip pancakes and sausage patties. The meal was delicious and perfect for the snowy weather we had all day.
  • Monday: Because the family was all over the place tonight, I wanted to make sure that I had something that was ready to eat whenever anyone had time/was hungry. On Sunday, I popped chicken breasts with taco seasonings into the slow cooker and shredded it when it was done. That meant all I had to do was shred some cheese, heat up the tortillas and taco shells, and put the meat on low for the family to eat when ready. Easy, filling, and delicious.
  • Tuesday: I had food I made on Sunday ready to go for today, but Jim had an unexpected business dinner and Connor had an unscheduled pep band event. It did not seem worth it to reheat the meal I made for just me. Thankfully, there was plenty of chicken leftover from yesterday, so I made myself some chicken nachos.
  • Wednesday: I had a fantastic business dinner at a steak house in Milwaukee. It was so good that I ate way too much. The rest of the family made do with the last of the chicken and sandwiches.
  • Thursday: I made this six-ingredient tomato soup on Sunday as well for this week. I meant to serve it earlier in the week when it snowed again, but best-laid plans and all. Jim and I had it for dinner tonight; Connor thought it was gross, and Holly refused to eat it because she could still pick out the tomato texture she hates so much. I guess this is one soup recipe I will not be making again.
  • Friday: I forgot to thaw ground beef for dinner, so we were forced to eat out. Since Jim got home so late, we were limited in available restaurants without an hour-long wait. Quaker Steak and Lube is not my favorite choice of restaurant, but in spite of the mediocre food, we had a really nice family dinner. It helped that we each left our cell phones at home.

This was a much better week for meals, even if they did not go over quite as well as I had hoped. I even had ingredients for at least three other meals that I never got around to making, which means a very brief trip to the grocery store to pick up just the essentials. Yay!!
