People are forever asking how I manage everything with such a busy schedule. I love to cook, but I don’t always have time to do so in the manner I would like. This weekly journal is a way to keep it real and show that while my intentions are good, sometimes life and all of its activities get in the way of serving a delicious, home-cooked meal and that it is perfectly okay.

  • Saturday: It was Eurovision day! Connor has gotten the entire family sucked into this melodrama, so essentially all work halted until the winner was announced. This meant that by the time everyone was done with their chores, it was late. Jim came to the rescue and picked up two pizzas from Papa Murphy’s.
  • Sunday: Holly’s Mother’s Day gift to me was to cook. All. Day. Long. She made a breakfast casserole and banana bread. She made a chocolate cake with strawberries and fresh whipped cream. She made tomato soup. All of it was from scratch. All of it was delicious. Have I mentioned how much I love that girl of mine?
  • Monday: Jim left tonight for a business trip, so it was just the kids and me for dinner. Holly ended up making a sandwich after dance classes, while Connor and I went for weekend leftovers. After all, someone has to eat them, and why dirty pans when you can just heat already dirty containers in the microwave?
  • Tuesday: Somehow, Connor, Holly, and I messed up our schedules and ended up not making dinner before obedience training for the pup. By the time we left, it was after 8 PM, and there was no way we wanted to take the time to cook anything. Noodles and Company to the rescue once again!
  • Wednesday: Connor was gracious enough to make dinner for him and me, trying a Honey Garlic Chicken recipe. He executed the recipe to perfection. Unfortunately, neither one of us was a fan of the sauce enough to want to make it again. As I told him though, that is why we try new recipes – because you never know when you will find a new family favorite.
  • Thursday: We kept it simple tonight with the kids’ choice of pasta aglia olio or pasta with marinara. Simple and fast are always appreciated, especially when you don’t get the chance to start dinner until 8 PM.
  • Friday: At first, Holly was supposed to go to a friend’s house. Then she wasn’t going to a friend’s house. Connor did go to a friend’s house and got home later than expected. I was recovering from an allergy attack. Consequently, dinner was rather forgotten until Holly convinced Jim to stop at Culver’s on the way home from dance rehearsal. Whatever works.
