What’s For Dinner – Week Starting 12 March 2016

In an effort to be a whole lot more organized this year, and because everyone is always posting what delicious food they make, here is what I have been serving my family for the past week. I also envision this being a detailed account of how I fail miserably at meal planning when life gets too busy. But hey, it’s real life. Speaking of real life, I am not and never will be a food blogger. If I ever were to post food pictures for you, I apologize in advance for how awful they are.

  • Saturday: Jim and I were initially going to watch a friend at a bowling tournament, but after cleaning all day leaving the house was the last thing I wanted to do.
  • Sunday: Not only did I cook tonight, it became a family affair. Even Jim commented that it has been forever since the whole family pitched in to get dinner on the table. We made Baked Cream Cheese Spaghetti and served it with a salad and garlic bread. Connor had seconds, and there was just enough for leftovers for lunch on Monday. That’s what I call kicking the work week off correctly.
  • Monday: Band, Forensics, and dance, oh my! What a night. Connor had a Forensics meet AND a band concert. Knowing that no one would be home before 8:30/9 PM, I made Beer Cheese Soup on Sunday so that all we had to do was heat it up. Served with pretzel rolls, it was an easy but tasty meal that was not too heavy for such a late dinner.
  • Tuesday: After yesterday’s late meal, I wanted to serve something simple and quick to the table. This Korean Beef Bowl was perfect. It was tasty and something completely different for a change. I added baby carrots to round out the meal and watched everyone enjoy themselves.
  • Wednesday: Jim was working late tonight, so it was a perfect night to eat up some leftovers. You know you had delicious meals when you mention leftovers, and the kids get excited.
  • Thursday: Tonight was another crazy night with Holly’s band concert and Connor’s track and Forensics practices. I did have a recipe planned and all of the ingredients on hand, but I totally failed to prep any of it ahead of time. Then, I worked late, so it was Chipotle for dinner after the concert. Sometimes, you do what you have to do.
  • Friday: Jim did not work today, so he was in charge of dinner. He made this Creamy Chicken Piccata served over pasta. I am such a sucker for lemony chicken and pasta. It was a great way to end this long, long week.

For as crazy as this week was with the additional events, I am proud that between Jim and me we made all but one of the meals I had on this week’s menu. Next week the kids are on spring break, so the lack of evening activities should make it even easier to stick to a menu.
