What’s For Dinner – Week of 4 October

In an effort to be a whole lot more organized this year, and because everyone is always posting what delicious food they make, here is what I have been serving my family for the past week. I also envision this being a detailed account of how I fail miserably at meal planning when life gets too busy. But hey, it’s real life. Speaking of real life, I am not and never will be a food blogger. If I ever were to post food pictures for you, I apologize in advance for how awful they are.

  • Sunday: The cooler weather as well as Green Bay football, home improvement projects, and an all-day marching band competition made it the perfect day to pull out the slow cooker for Beef Tips. I served it over mashed potatoes and added a salad for something green. We finished off dinner with an apple pie (not homemade). It was a perfect fall meal.
  • Monday: Today was the first day of the floor installation. By the time I got home and the boys finished up for the day, all we had time for was frozen pizza. Oops.
  • Tuesday: I have the best friends. Seriously. My girlfriend made dinner for everyone and brought it over while I was at a hair appointment and Holly at dance. Considering I did not get home until 9 PM, her enchilada bake proved to be a lifesaver. Plus, it was damn delicious. I need her recipe.
  • Wednesday: I intended to cook today. I really did. I even had two options ready to go. Then, Connor had a team dinner for cross-country, and my brother-in-law took Holly out for dinner. Jim was busy getting the last room ready for floor installation, and I worked late. So, I had leftovers, and Jim had a sandwich. It was not my finest hour.
  • Thursday: A cross-country meet, dance, and finishing up the last of the floors meant we ate late tonight. I was going to do something elaborate, but we opted for burgers and tater tots instead. No complaints here.
  • Friday: I think we were all tired after this week. I know I probably should have cooked tonight, but when Jim recommended ordering Panera, I jumped at the chance. Plus, he even went to pick it up. I love that man of mine.
  • Saturday: My brother-in-law leaves today, and I am ashamed to admit I have a fridge full of ingredients for recipes I did intend to cook this week. Whether we keep it low-key after the crazy week or I bust out one of those recipes, either way, I am sitting pretty for next week!
