Weekly Roundup 19th September 2014
So we are round to this time of the week already. The last year has been so action packed that the weeks are literally flying by. Despite creating everything that is going on in my life I seem to have little or no control over things. I know that is completely not true but everything feels really exciting and scary at the same time. I will give you some more details on what I have been up to this week but first we will deal with the recipes pictured above. I have detailed them all below starting at the top left hand corner and working clockwise:
  • The first recipe is a Hazelnut Layer Cake with Fig Compote & Vegan Cream Cheese Frosting from Dolly and Oatmeal. I have to say that the recipe calls for eggs rather than being completely vegan but just change them for flax eggs and you have a really impressive vegan cake. This is just beautiful and a wonderful combination of flavours.
  • If you are looking for a simple tasty salad when the whether is warm then this Lemon Cucumber & Red Onion Salad from Cupcakes & Kale is a real winner. It is so simple but so delicious and an easy addition to this weekly roundup.
  • I always look out for new granola recipes and with the fact I have now discovered I can buy pumpkin puree (it is not that widely used in the UK) I am really excited about this Double Pumpkin Pie Granola from GI365. I am going to have to add this to the autumn breakfast list!
  • I have to be honest |i have never heard of pierogi before but I think I will like it. This recipe for Sweet Potato Pierogi from The Veg Life looks amazing, really tasty and actually quite simple to make.
  • There are so many pumpkin recipes around at the moment I could easily make this roundup with just pumpkin recipes. I do try and give a bit of variety though and only put my favourites in and who would not love these Mini Cinnamon Sugar Pumpkin Muffins from Averie Cooks, even if they are a bit heavy on the sugar (I won't tell).
  • The next recipe is an unusual one for me and I am not normally a fan of vegan patties and burgers but these Lentil Flatbread Sandwiches from Delish Knowledge look amazing and might actually be changing my opinion. They are definitely something I will try and see where it goes.
I have a few other bits to share with you this week:
  • Firstly and easily the most exciting bit is I had my first yoga session with a football club this week. It was nerve wracking and complete chaos really but once they get used to me it should get calmer. Despite that I loved it, it is a different way to teach yoga and so removed from a club setting that it is like a different discipline but a great one.
  • For my inspiration post this week I have pick my favorite post from Tiny Buddha which is a really inspirational website. This post is by Lily Velez and how she Freed Herself From Depression. It is well worth a read.
  • If you ever wondered How to Store Your Produce then you should definitely check out this post on Nutrition Stripped.
  • This is a slightly strange one but there was an interesting article on The Buddhist Channel detailing how The Dalai Lama says he might not be born again. It is really an insight into the struggle of Tibet with China.
  • If you like smoothies then you should not miss this Smoothie Roundup from Eat, Spin, Run, Repeat. There are some great options there, you could say something for everyone!
  • Finally, last week I posted a link on Soul Beet giving you details of Foods you Aren't Eating But Should Be but that was only part 1 and today I have Part II for you.
