So as usual I am starting with inspiring recipes from the week all of which are pictured above and detailed below, starting at the top left hand corner and working clockwise:
- Vegan Persian Frittata from Coconut & Berries - I am on a bit of a quest at the moment to find a really good omelette/frittata alternative and it is not proving easy but this looks like a good one.
- This Orange Creamsicle Smoothie from GI365 just looks so yummy and makes me want to start making smoothies right now.
- This really simple Creamy Vegan Garlic Pasta with Roasted Tomatoes from the Minimalist Baker looks like the perfect option when you want to make a quick and tasty meal. It would be perfect served with a large green salad.
- White Chocolate Lemon Squares from Healthful Pursuit. These are a great little treat when you want to be naughty but not massively. I would look for some alternative to dates in the base though as dates and dried fruit have such a high GL. Maybe a bit of agave and some vegan milk will bind it all together.
- If you are looking for a healthy snack then these Breaded Vegan Cauliflower Nuggets from Divine Healthy Food look like just the ticket and a novel use of cauliflower.
- Chocolate Mousse Pie with Peanut Butter Whip and Pretzel Crust from Oh Ladycakes is something to go for if you want to treat yourself or have guest that you really want to impress!
- The first thing to say is that doing my weekly roundup is getting harder and harder and taking longer. There are more and more things to share with you and just going through all the recipes is a job. So I hope you appreciate it!
- I wanted to share this post on feet from Yoga Journal partly because it is interesting and useful but also because is reminded me of my class on Tuesday when my teacher was talking about appreciating and loving your body and she declared that she loved her feet. I think I might have been alone but I found it quite funny.
- I found this Guide to Plant Based Protein Supplements from Nutrition Stripped really interesting and helpful when deciding which one to go for.
- I have been trying to get a mortgage this week and it has been giving me a real headache, sleepless nights and no desire to cook. Hopefully it will all be organised soon and I can get back to normal.
- I thought this Salt Sugar Fat Review from Pickles & Honey was really interesting and I definitely think it is worth a read, will see if I can get it on Kindle.
