As I was unavailable last week there was not a weekly roundup and so this week it actually covers the last 2 weeks so has taken me a bit longer to put together. Also I have split my recipes that I love into sweet and savoury to make them easier to follow. Above are the savoury ones and I have detailed them below starting from the top left hand corner and working clockwise:
- White Bean Sandwich Bread Loaf from Vegan Richa. I just had to include this as it was such a novel idea and looks like it makes amazing bread that has the added advantage of being full of protein.
- Roasted Cauliflower and Split Pea Soup from A Touch of Zest looks like a fresh and tasty soup that is perfect for this time of year.
- Spring Carrot, Radish and Quinoa Salad with Herbed Avocado from Cookie & Kate. This is one of my favorite blogs and this looks like another great recipe that is perfect for spring evenings.
- Kathy at lunchboxbunch.com has done it again with this amazing looking Green Sunshine Dip that could not be better suited to Spring. I think this would be amazing with some homemade crisp bread.
- The Simple Veganista really comes up with some recipes that make you think and look divine and these Spicy Lentil & Quinoa Wraps with Spicy Tahini Dressing are no exception and my next option when I can't think what to make.
- Thai Style Broccoli Salad with Sweet Chilli Lime Dressing from GI365 is innovative and perfect for spring and summer, it would make an excellent lunch when you just want something light.
Now we have done with all those fabulous savoury dishes we might was well treat ourselves with a healthy dessert and I have got some really amazing ones here. Recipe details starts and top left corner and works clockwise:
- Almond Cake with Blood Orange and Cardamon from Yummy Supper. This is not a vegan recipe but the only change needed is to use flax eggs instead of normal ones and then you have a really tasty dessert that is original and not run of the mill.
- Thanks to Cara at Fork and Beans for this gorgeous looking Vegan White Chocolate Mousse. A quick and easy dessert that is sure to impress.
- Healthy Energising Hazelnut Brownie Bars from Produce on Parade. Who doesn't like chocolate and when it is used in treats like this then the guilt is kept to a minimum.
- Healthy Orange Hazelnut White Chocolate Muffins from One Ingredient Chef. I think I love every recipe that Andrews produces for this blog but this one really stood out as yummy and exciting.
- Grain-Free Mesquite and Cacao Nib Muffins from My Darling Lemon Thyme. Do I need to say anything other than another winner!
- If you read my weekly roundup on a regular basis then you will know that it is not complete without a recipe from the Minimalist Baker and these Chocolate Chip Oatmeal Cookie Pancakes, although technically a breakfast would make the perfect after dinner treat if served with coconut yoghurt or oat cream.
I have so many other things going on at the moment I hardly feel like I have time to think. I have put some highlights along with some other posts that caught my eye over the last 2 weeks:
- The first thing to mention is that I went to the Be:Fit London show last Friday and although it was not as good as expected I was able to get some great new yoga gear including orange and bright pink leggings, you can see me coming from miles away now!
- This post on Homemade Milk from the Frosted Vegan is really useful and interesting, great if you have been debating whether to make your own milks like me!
- I have started a nutritionalist course which would allow me to become a Level 5 nutritionalist but I will probably use it mostly for this blog so watch this space.
- If you have not signed up for it yet them please get the Bold Vegan newsletter, many of the stories are not on the website and there was a great one the other week about an unpleasant dining experience in Hong Kong, it made me chuckle.
- I love avocado, who doesn't and this Avocado Recipe Roundup from Katy's Kitchen is really helpful with some great recipe ideas.

- I got my next assignment for my yoga teach training and need to research and write about Chakras. The pressure is really on!
