Warm Berries with Greek Yogurt, Flax Seed, Mint and Fresh Ginger

IMG_7898Ever have those days where you just don’t feel good, from your mood to your head to your stomach, and it’s only 10am but you feel like it’s been the longest day already. We all have our own pick me ups, whether it’s a Starbucks coffee, going for a run, screaming or chocolate. Yes, chocolate does do the trick most times but when the weather is this gorgeous and I feel good, I crave nothing more than fresh ingredients. How can you go wrong with berries and yogurt? But I love the combination of warm berries dolloped with creamy greek yogurt and the nutty flavors of flax-seed with the spiciness of fresh ginger and mint. Best eaten under the sunshine alongside your four-legged best friend.IMG_7904

Warm Berries with Greek Yogurt, Flax Seed, Mint & Fresh Ginger

Ingredients

1 cup – Fresh or Frozen Berries

1/2 cup –  Greek Yogurt

1 tablespoon – Ground Flax Seed

1 inch – Freshly Grated Ginger

Mint

Recipe {Makes 1 serving}

Warm the berries in the microwave for 2 to 3 minutes, depending how warm you want them. Top with the yogurt, flax-seed, ginger, and mint.
