Waffle Berry Pudding

This is an all time family favorite – quick and easy and charms everyone’s taste buds!

Ingredients:
2 Packs of Waffles
100g White Chocolate Chopped  plus some to grate on top
200g Tescos Fresh Blueberries
200g Tescos Fresh Strawberries
35g Caster Sugar
1 Tsbp Plain Flour
300ml Creme Fraiche
2 Eggs
1/2 Tsp Vanilla

Grab 1 of the packs of waffles, and start to tear into small pieces and place into the bottom of an oven proof dish.

Break up the white chocolate into small chunks and drop over the broken waffle pieces. Then add 100g of blueberries and scattered blueberries over the top.

Add 100g of strawberries cut into pieces. If they a small strawberries cut into half, if large the into quarters and add to the top the waffle dish.

Tear up the 2nd pack of waffles and placing over the 1st layer.

Keeping 1-2 chunks aside, add the remaining white chocolate over the waffles.

Add remaining blueberries

Add the remaining strawberries

Combine sugar and flour in a bowl,add cream fraiche, eggs and vanilla essence and whisk briefly.

Spoon evenly over top of the berries.

Try and ensure you pour over all evenly.

Sprinkle on some finely grated chocolate – I used my micro plane grater.

Bake 20-25 minutes or until golden brown and set in center at 200C.

Cool for 2-3 minutes and serve!

Equally yummy served cold the next day!!
