Vrat Ke Aloo

Vrat ke Aloo is a very simple, easy and quick recipe to make for vrat/fasting. These crispy vrat ke aloo goes very well with kuttu (buckwheat flour) ki roti or puri or you can serve them with singhare (water chestnut) ki roti or puri. To accompany them you can serve yogurt, coriander chutney and roasted peanuts. 

Vrat ke Aloo
Servings : 2 persons
Preparation time : 5-10 minutes
Cooking time : 5-10 minutes

Ingredients :

Potatoes : 4 

Ghee : 1 tsp + for frying
Cumin seeds : 1/4 tsp
Green chili (finely chopped) : 1/4 tsp
Coriander leaves : for garnish
Rock salt (sendha namak) : to taste
Lemon juice : 1/2 tsp
Black pepper powder : 1/4 tsp

Method :

1. Par boil potatoes in a pressure cooker. Take only 1 or 2 whistles as we don't want them to cook fully. 

2. Peel the skin off and slice them lengthwise.
3. Deep fry the sliced potatoes in ghee till golden color. Keep it aside on a tissue paper.
4. Now take 1 tsp of ghee in another pan. Add cumin seeds, green chili. Saute them for a minute.
5. Add the fried potatoes. Slowly stir them.
6. Finally add rock salt, lemon juice and black pepper powder.
7. Cook it for a minute. 
8. Garnish them with coriander leaves and green chili. 
9. Serve with kuttu/singhare ki puri/roti.
