Vegan Pesto Green Burrito
Ingredients
- 3 Whole-wheat tortillas
- 1 medium bunch organic kale
- 1 small bunch collard greens
- 2tbsp. organic pumpkin seeds
- 2tbsp. organic sunflower seeds
- ¼ small head organic cabbage
- ½ cup pesto sauce
Instructions
- Wash and chop kale, collard greens and cabbage in small pieces or simply shred the greens in a food processor until small pieces. Set aside.
- Place sunflower and pumpkin seeds in a blender and blend until they are crushed in small pieces.
- Combine the greens, seeds and pesto sauce in a bowl and mix everything properly.
- Place each tortilla wrap on a surface, put the filling on top of it and gently roll the tortilla until it covers the filling.
