Vegan Pesto Green Burrito

Ingredients

  • 3 Whole-wheat tortillas
  • 1 medium bunch organic kale
  • 1 small bunch collard greens
  • 2tbsp. organic pumpkin seeds
  • 2tbsp. organic sunflower seeds
  • ¼ small head organic cabbage
  • ½ cup pesto sauce

Instructions

  1. Wash and chop kale, collard greens and cabbage in small pieces or simply shred the greens in a food processor until small pieces. Set aside.
  2. Place sunflower and pumpkin seeds in a blender and blend until they are crushed in small pieces.
  3. Combine the greens, seeds and pesto sauce in a bowl and mix everything properly.
  4. Place each tortilla wrap on a surface, put the filling on top of it and gently roll the tortilla until it covers the filling.
