Have you ever had a no sugar low carb protein bar? Well, they are usually like £2.50 a bar and only about 40g, which is pretty expensive. I was having a few of these vegan friendly protein bars on my January clean eating Dietbet challenge I thought I would try to create my version of a healthy vegan protein bar.
When you make bars like these at home you can add ingredients and flavours you like without spending a fortune, It was rather satisfying being able to make my own bars/balls.
I added some known superfoods to these bars such as chia seeds rich in Omega 3, flaxseed which also rich in Omega 3, 6 and 9 which are great for vegetarians and vegans as it's a natural source of Omega oils which is usually found in fish.
My vegan protein healthy balls are completely sugar-free, the sweetness comes only from agave nectar and dried cranberries, which makes these little ball lower in carbs. I worked out the nutrition and they are 65 calories per ball with low carbs, high protein and moderate fat.
Ingredients
20g Ground Almonds
25g Flaxseeds
25g Oats
30g Raw Mixed Nuts
1/2 Tsp Chia Seeds
25ml Agave Nectar
20g Dried Cranberries
10g Bioglan Cacao & Flax Powder
30g My Protein Vegan Powder
100g Peanut Butter
Add all the ingredients to a food processor.
Turn on for about 2 minutes until all the nuts have been broken and blitz and everything have mixed well making a dry dough mixture.
Using a mini scoop, scoop the mixture into your hands.
Roll into a ball
Chill in the fridge for at least 2 hours and enjoy.
