In my culture – Gujarati Indian we tend to find a lot of vegetarians who do not eat eggs either, so I’ve testing and trying different recipe combinations.
This specific recipe has worked very well, not too sticky or hard and without using an egg substitute. As some of these so called “egg substitute” are actually just not fresh egg but dried egg instead.
This recipe is also great for vegans as no diary was used at all.
Ingredients:
250g Self Raising Flour
200g Caster Sugar
3 Tbsp Cocoa
1 Tsp Baking Powder
6 Tbsp Oil
1 Tbsp White Vinegar
1 Tsp Vanilla
200ml Water
Add all the dry ingredients to a mixing bowl
Mix briefly until the combined
Then make 3 wells and add vanilla, vinegar and oil in each well separately, then pour water over all three wells.
Mix the mixture well for about 1-2 minutes on medium to high-speed.
Pour the batter into a slightly oiled baking tray or tin.
Bake in the oven at 170c for 30-35 minutes
Sprinkle on a little icing sugar.
Slice into 16 or so pieces and enjoy.
