Vegan Banana Coconut French Toast

French toast serves as a great finger food for toddlers and kids. However nearly every French toast recipe requires dipping the bread in an egg-milk mix. But what if you want to have a vegan French toast? Sounds impossible, but we’ve done it! Yes, you can make a healthy vegan banana coconut French toast without using eggs and without compromising on the taste. Whole meal or multi grain bread pieces are dipped in a batter made from ripe banana and coconut milk and shallow fried in little oil until golden brown from both sides.

Ingredients:

  • 1 large ripe banana
  • 1/4 cup full fat coconut milk or as required
  • ¼ teaspoon Cinnamon powder
  • 3-4 small slices of whole meal bread
  • Oil for shallow frying

Method:

1. Mash the ripe banana in a bowl. Add coconut milk and cinnamon powder to it and whisk well until we get a smooth batter.

2. Remove the crust from the bread and cut into pieces of desired shape.

3. Dip each piece into the mixture to coat it well from both sides. Remove it quickly.

4. Heat oil in a frying pan and shallow fry the pieces for 1-2 minutes or until they turn golden brown on both sides.

5. Remove from the pan and serve immediately.
