Cake:
120g Plain Flour
100g Caster Sugar
40g Light Brown Sugar
1 1/2 Tsp Baking Powder
40g Margarine
120ml Milk
1 Egg
1/2 Tsp Vanilla Extract
Add the ingredients to a mixer and mix on medium speed for about 1-2 minutes. Scoop into muffin cakes (15).
Bake at 170c for 20-25mins until golden brown and test with cake tester if needed and allow to cool.
Frosting:
100g Butter
300g Icing Sugar
40g Cocoa
1 Tsp Vanilla
2 Tbsp Milk
50g Cream Cheese
Add all the above to a mixer and mix until peaking texture. Pipe over cakes and decorate with a chocolate and sprinkles.
