Two Ingredients Peanut Butter Cookies - Just Mix Peanut Butter and Honey and Bake! HIGHLY RECOMMENDED!!!

&version;Can you believe that these cookies are made with just two ingredients?
In fact, these two health-conscious ingredients are 1) 100% peanut butter with no added sugar and oil 2) honey.
This 100% peanut butter is exactly the same peanut butter that I used to bake The Ultimate Smooth Melt-in-the-mouth Peanut Butter Cookies at HERE and The Perfect Cottony Soft Peanut Butter Chiffon Swiss Roll at HEREJust in case if you don't know, this 100% peanut butter is a common item to buy in most supermarkets in Australia, UK and US. If it is not easily available in the place that you are living, you can actually make your own. All you need is roasted PEANUTS and process until smooth and runny when the peanut oil is released. Then... when I mix this healthful peanut butter and honey together, I can bake the mixture into these cookies. Isn't this amazing?

The original recipe uses maple syrup but I’m curious to see if honey works. And YES. It worked!The original recipe contains 2 tablespoons maple syrup and 1 cup 100% peanut butter (with no sugar added) and so the cookies have hardly any sweetness in them and so I increased the amount of honey added to 50g and the recipe still worked.
As maple syrup contains 68% sugar as compared to 82% sugar in honey, each of my cookies contains 3g sugar as compared to 1.5g sugar per cookies that are made with 2 tablespoons maple syrup. Although the honey cookies have two times the sugar in the maple-syrup cookies, the honey cookies taste a lot better with more significant sweetness. Having said, I wouldn't recommend adding more than 50g honey or maple syrup as this will make the peanut-butter-dough softer and runny, resulting the cookies to be more difficult to shape and bake later.

Here's the recipe that is adapted from here.

Makes about 12-13 medium cookies
250g smooth peanut butter, made with 100% peanuts - with 49% fat and no sugar no other fat added - please watch my video and read my above text!
50g honey or maple syrup
Preheat oven to 180°C / 350°F. Line baking trays with baking papers.
Use a spatula or wooden spoon to beat peanut butter and honey or maple syrup until mixture forms a soft dough - watch my video.
Scoop tablespoonful of dough and arrange them on the prepared tray with about 3cm apart. Flatten dough slightly and bake for 9-10 mins, rotating the trays from top to bottom halfway through or until cookies are golden brown at their edges. Do not over-bake cookies! Allow cookies to cool slightly and set on the trays for about 10 mins. Transfer onto a wire rack to cool completely.
Store cookies in an airtight container for up to one week at room temperature.
