I love winter time, specially the start of festive season AKA Christmas! However this will be my first Christmas as a vegan, so there won't be any Cheese boards to go with this new super delicious chutney, however I've enjoyed it in sandwiches, crackers and as a dip!
The tomato and onion makes it taste like a tangy spicy version of a hamburger relish. The combination of tomato, apple and onion make the perfect textured chutney and the vinegar and spice adds that winter comfort aspect.
Chutneys are great as presents, specially with Christmas around the corner. Chutneys keep for about 3-6 months due to the vinegar preservatives.
Ingredients:
350g Chopped Apples
2 Medium Onions
1 Tbsp Oil
1 Tsp Ground Coriander
Pinch of Mustard seeds
1 Tsp Ground Ginger
1/2 Tsp Chilli Powder
1/8 Tsp Tumeric
2 Star anise
5-7 Cloves
100g Sugar
50ml Apple Cider Vinegar
200ml White Vinegar
Add oil, chopped apples, chopped onions, chopped tomatoes, spices to a pan over medium heat.
Stir in vinegar, sugar, cloves and star anise and bring to a simmer.
Simmer for 20 minutes until the chutney thickens.
Spoon into sterilised jars and allow to cool.
