ENG | As the summer is gone what if we say goodbye to it with an authentic tomato and pepper cake?! It’s delicious if you’re a lover of the countryside but if not it will also captivate you. Enjoy your meal!

  • 8 ripe tomatoes
  • 6 green peppers
  •  3 eggs boiled
  • 200ml water
  • 200ml of extra virgin olive oil (or sunflower oil if you prefer a milder flavor)
  • 25g live yeast
  • Approximately 500g of flour.
  • Extra virgin olive oil for frying
  • Salt
  • Sugar

  1. Grate the tomatoes and fry them with abundant olive oil, some sugar and salt.
  2. Add the peppers cut into pieces. And let fry for about an hour on low heat.
  3. While the sauce is frying prepare the dough in a large bowl, I usually use a clay pot, as in the past:). Add the flour to the pan (don’t add all flour, if you need more you can add more lately), the water mixed with yeast and 200ml of oil. And knead the mixture.
  4. When the dough no longer sticks let rest about 5 or 10 minutes until they increase in size.
  5. Put the dough on a baking tray and pour the sauce. Put in the oven for 20 to 30 minutes at 180 ° C.
  6. When it’s done you can add boiled egg. And you have ready this typical summer tomato cake!
