Erin Go Bragh! Okay, maybe it is a day early, but with a last name of Shannon, it is NEVER to early to celebrate St. Patrick’s Day. We’ve been in full-on Irish mode for a few days now. Jim has made several batches of Guinness cupcakes with Bailey’s Irish Cream frosting. I made a Dubliner Cheese Tart for a get-together with friends last night. I have a double-batch of Shepherd’s Pie ready to warm in the oven for tonight. I have the filling for Steak and Guinness Pie done and waiting for its pastry crust for tomorrow’s dinner. The house is awash in green (and has been for a few weeks now). We have ALL been wearing our favorite green shirts and tees. We celebrate the luck of the Irish year round, but definitely let our exuberance show in March. Bring on the green beer! Sláinte!
