It’s bento time!
This weekend I’ve been working hard on my latest bento.
Since summer is in full swing now and the heat is bearing down on us at the moment I decided to make something light, bright, fresh and summery.
I home made some tasty barbecue sauce and cooked it over some delicious corn fed chicken pieces before stripping it off the bone and on to bite sized skewers.
I also cooked up some small spicy potato rosti’s from scratch that I then made into cute little chick shapes and some lovely sweetcorn fritters made with sweetcorn, chilli, spring onion and a home made batter also cut into little chicks nesting in my bento box.
To add that something light, refreshing and sweet I made an apple, white cabbage, spring onion and pomegranate salad.
Between a fruit salad and a savoury salad the combination really worked well, especially with the sticky barbecue chicken!
Now to find a warm, quiet, comfortable place in the park to sneak a few bites!
